Sea bass Tartare with gem lettuce cups

About the Recipe:

Ingredients:

3 gem lettuce leaves

100g 1cm cubed skinless seabass

1.2 avocado, cubed 1cm

15g fine chopped mint

½ banana shallot, finely diced

½ clove minced garlic

2 tbsp olive oil

¼ tsp crushed fennel seeds

½ tsp finely crushed coriander seeds

5 toasted crushed hazelnuts

Juice of ½ lemon

Zest of ½ an orange

Salt/ pepper taste


Method:

Mix everything very well, gently with the avocado, leaving the hazelnuts to finish. let sit five minutes. Place evenly in three gem lettuce leaves. Sprinkle each cup with hazelnuts.
