Roasted broccoli with nigella, sesame seed, crumbled vegan feta, and fresh coriander

About the Recipe:

Ingredients:

1 large head of broccoli

2 tbsp rapeseed oil salt to taste

1 tsp onion powder

1 tsp garlic powder 

1 tsp dry coriander powder

1 tbsp nigella seeds

1 tbsp sesame seeds

 

To finish:

4 tbsp crumbled vegan feta

1 bunch of fresh coriander

Zest of two lemons

Sesame oil

 

Method: 

Preheat the oven to 200 C and prepare a baking sheet. Break apart the broccoli, keeping the stem. Cut the end off the stem and peel. Cut into moons and add to broccoli. Place onto the baking sheet and add the rapeseed, powders, and salt. Mix well. Roast for about five minutes, and toss. Do this several times until crispy and slightly charred around the edges. On the final toss, add the seeds. Roast three or four minutes more and take out of oven. Dress with sesame oil and zest. Let it cool down a bit, and then add the fresh coriander and feta.
