Ingredients:
8 dates, chopped or 1 ½ cup diced dates
¼ cup raw sunflower seeds
¼ cup pumpkin seeds
¼ cup almonds
¼ cup shredded coconut
½ cup ground flax seeds/ optional/ can use sesame seeds
½ cup hemp hearts
½ cup rolled oats/ or puffed quinoa
1 tsp vanilla paste
6 tbsp maple syrup
5 tbsp coconut oil, softened
1/2 tsp salt
4 tbsp chia seeds
½ cup cacao nibs

Method:
Combine dates, seeds, almonds, coconut, flax, hemp, vanilla, maple syrup, salt, and coconut oil into a food processor. Will need to do in batches. Transfer to a bowl and add the cacao nibs. Use your hands to form a batter into a rectangular shape into a baking dish, or you can roll into bite size balls. Make sure to wrap the base of the dish with plastic wrap for easy removal. Pre-cut the bars with a bread knife. Place in the freezer for 10 minutes to harden.Â
