About the Recipe:
Grilling fruit is not as easy as it seems. The fruit needs to be slightly green, or it will get too mushy when it hits the grill. The grill needs to be very hot or the fruit will stick to the pan. But I must say there is nothing more lovely than a grilled peach…the nuts could be switched around and even the cheese, but you must try grilling your fruit.

Ingredients:
3 large firm peaches
240 grams of semi soft goat cheese
200 grams roasted crushed hazelnuts
2 red onions
1 head of romaine lettuce
1 bunch of mint
1 bunch of sorrel (optional)
3 tbsp balsamic
5 tbsp olive oil
Juice of 1 lemon
Salt to taste
Method:
Pre-heat grill pan on heat. Slice your peaches into wedges. Slice your red onion into thick rings (do not pull apart). Grill on both sides until you see grill marks and flip. Set aside to cool.
Cut your goat cheese into small squares and roll around in the crushed hazelnuts until covered. Chop your mint and blend into the cheese squares.
Slice the romaine from the root to top in ribbons. Slowly layer the above ingredients, working in pieces of sorrel as you go.
Take a small bowl and mix in the balsamic, olive oil, salt, and lemon.
Drizzle liberally all over the salad when ready to serve.
