About the Recipe:
Gouda. Nutty, crystallised goodness. Melted in between buttered fried and grilled sourdough- its just whole other level of deliciousness. Every now and then you just need a toastie.

Ingredients:
2 thick slices of good quality sourdough/145g
*can do with or without crust
58g extra mature gouda cheese/peeled with a peeler
15g/2 tsp fresh mayo
30g/2 ½ tbsp ghee

Method:
Preheat oven 200C. spread mayo thinly on bread and add cheese. Sprinkle with a pinch of salt and sandwich together. In a frying pan, melt ghee, and keeping heat to medium low, and fry the toastie. First fry for about 4 minutes, then carefully flip over. Should be lightly golden. Cook another 4 or 5 minutes and place on a baking sheet. Press firmly so it glues together with the cheese and bake in the oven for about ten minutes. Slice on a vertical.Â
